Ingredients: 1 small pumpkin, peeled and diced. 4 cups vegetable broth. 1 onion, chopped. 3 cloves garlic, minced. 2 tablespoons miso paste. 1 tablespoon ginger, minced. 1 tablespoon coconut oil. 1 teaspoon turmeric powder. Salt and pepper, to taste. 1/4 cup coconut milk. 1 tablespoon lime juice. Fresh cilantro, for garnish.
Instructions: Put coconut oil in a big pot and heat it over medium-low heat. Put in the ginger, onion, and garlic. Cook the onion until it turns clear. Cumin, salt, and pepper should be added. Use a stir to mix. Put in vegetable broth. Bring to a boil, then lower the heat and let it cook for 20 minutes, or until the pumpkin is soft. Take it off the heat and let it cool down a bit. Put the soup in a blender and blend it until it's smooth. Add the miso paste, coconut milk, and lime juice to the soup and stir them in. If necessary, gently heat again. Serve hot with fresh cilantro on top.
