yeast recipe: mix flour and water into a somewhat liquid. cover, leave on counter. Every day, add a spoonful of flour to the mix, occasionally water if it gets too thick. When the mixture begins to bubble, yeast is active. Keep in fridge, use as much as you need in recipe, literally the yeast left on the edges of the container are enough to make more yeast. Keep feeding it every day :)
Not a joke - this is how you make bread starter for sourdough, and how people worldwide make bread at home to this day.
The wild yeast found in flour and in the air of your home can be cultivated by just.... leaving wet flour paste and a sprinkle of sugar out as free real estate.
Yeast moves in, you feed it a bit more every day, and thatâs a bread starter!
Mine is about two months old and going strong. Some bakeries pride themselves in having bread starters over a century old. The wild yeast gives bread a complexity and depth of flavor that gives sourdough itâs iconic flavor.

When the yeast is hungry it starts to smell like wine or acetone.
When itâs eating well and happy, it smells like vinegar and fresh bread.
Keeping it cold slows its metabolism, so you can put it in the fridge if you donât make bread every day.
In the fridge you only have to feed it every 2 days or so. Left out at room temperature, you have to feed, and take a piece off for baking every day.
Yeast is killed at temps over 85 degrees Fahrenheit, but it can withstand short periods of being frozen, so the cold fridge is fine.
As long as you have flour on-hand, itâs basically infinite ready-to-bake bread.

I used to be terrified of riding buses. I might still be. Havent been on one to recheck. Any who, I was riding one time. And for some reason, I remember being so terrified. As in exceptionally more so. A guy came and sat next to me and started talking. Freaking was the worst. I felt in danger. Grocery store has reached the point where some of my staples are in danger, I knew about stockpiling rice and pasta but I did not think so much about stockpiling bread.
Bread generally goes stale in under a week or is a space-inefficient use of rare storage space.
Donât get me wrong, Iâve absolutely got a loaf in my freezer, itâs just a stupid use of space and I admit it.
If we go full lockdown it is going to be about time I learned to actually bake bread. I keep saying âoh I ought to learn how to do thatâ and then not doing it, but this is pretty well a divine mandate.

Hereâs a very dense, protein-rich, gluten-free, bread-for-one microwave bread recipe that I used to use CONSTANTLY before I found bread that I could eat in stores. This is actually super good gluten free bread but it is. It is so much. Itâs incredibly filling. I highly recommend slicing your bread product in half and toasting it lightly before using it as bread.

no kneading, and if you make the batter right before bed it proves overnight and does most of the work for you while youâre sleeping
changes i make are: using half white and half whole wheat flour, using a very scant 2 cups warm water rather than the straight 2 the recipe asks for (if you can land it right between the 1Âł/⎠and 2-cup line, youâre golden), and adding a fuckton of random herbs and/or seeds on top right before baking
