Chicken Biryani is a traditional Indian dish that combines spiced chicken and fragrant rice. It's a flavorful and filling meal that's ideal for a special occasion or a weeknight meal.
Instructions: Soak the rice for 30 minutes in water. Set aside after draining. Combine the chicken, yogurt, ginger paste, garlic paste, turmeric, chili powder, garam masala, cumin powder, and salt in a large mixing bowl. Refrigerate for at least 1 hour, covered. Warm the vegetable oil in a large pot over medium heat. Combine the cardamom pods, cloves, cinnamon stick, and bay leaves in a mixing bowl. Cook for about 1-2 minutes, or until fragrant. Fry the sliced onion until golden brown. Cook until the marinated chicken is browned on all sides. Pour in the soaked rice and water. Bring the water to a boil. Reduce the heat to low, cover, and leave to cook for 20-25 minutes, or until the rice is tender and the liquid has been absorbed. Remove from the heat and allow to rest for 5 minutes before fluffing with a fork. Serve immediately and enjoy.
