Ingredients: 1 cup orzo pasta. 1/2 cup cherry tomatoes, halved. 1/2 cup cucumber, diced. 1/4 cup red onion, finely chopped. 1/4 cup feta cheese, crumbled. 2 tablespoons fresh basil, chopped. 2 tablespoons olive oil. 2 tablespoons balsamic vinegar. Salt and pepper to taste.
Instructions: Cook orzo pasta according to package instructions. Drain and let it cool. In a large bowl, combine the cooked and cooled orzo pasta, cherry tomatoes, cucumber, red onion, feta cheese, and fresh basil. In a small bowl, whisk together olive oil and balsamic vinegar. Season with salt and pepper to taste. Drizzle the dressing over the salad and toss everything together until well coated. Chill in the refrigerator for at least 30 minutes before serving. Garnish with additional fresh basil if desired. Serve and enjoy!
