Ingredients: 1 lb boneless, skinless chicken breasts, diced. 2 cans 14.75 oz each creamed corn. 1 can 14.5 oz low-sodium chicken broth. 1 cup diced onion. 1 cup diced carrots. 1 cup diced celery. 2 cloves garlic, minced. 1 teaspoon dried thyme. 1 teaspoon dried oregano. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1 cup heavy cream.
Instructions: In a slow cooker, combine diced chicken, creamed corn, chicken broth, onion, carrots, celery, garlic, thyme, oregano, salt, and pepper. Stir well to combine all ingredients. Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through and vegetables are tender. Stir in heavy cream during the last 30 minutes of cooking. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh herbs if desired.
