Cauliflower rice sushi🍥
Rice: Chop 1/3 head of cauliflower and put in food processor Pulse until rice like texture Add 1 tbsp oil to frying pan and add rice Allow rice to cook until it starts to brown (5 minutes) Set aside.
Inside: This part is completely up to you but I used ¼ avocado ¼ cucumber, sliced Side of cream cheese Lay down one large piece of Saran Wrap and place sheet of seaweed paper on top. Cover sheet with ribs evenly Add insides 1 inch from the end. Start to roll evenly squeezing to secure.

Cinnamon apple spice energy bars. 🍏 Combine: 1/2 cup sunflower butter 1/3 cup chopped dates 2 cup oats 1/4 cup flax seeds In another bowl combine: 2 green grated apples (make sure to squeeze the juice out after being grated 1 tsp vanilla 2 tbsp cinnamon 1 tbsp apple pie spice (optional) A pinch of salt Add wet mixture to dry, and mix together well Spread approximately 14 balls out on cookie sheet and allow to sit in freezer for a hour minimum. This step is optional as you may like to just keep them in the fridge.

Curry themed falafel salad👌🏻😍Falafel:
1 can chick peas One egg 1 piece of bread ½ cup shredded carrots 1/8th cup chopped parsley 2 tbsp curry powder 1 tbsp minced garlic Pulse in food processor. Lightly fry for 90 seconds in frying pan on medium heat. Salad: 2 cups spinach Cucumber ¼th avocado 1/8th cup cheese Shredded carrots 2 falafels
Dressing: 2 tbsp sour cream 1 tsp curry powder 1 tsp smoked seasoning

Water melon slushy 🍉🍉 I first had one of these on my trip to Thailand and let me tell you, it tastes amazing!! 1 cup water melon ½ cup ice 1/3 cup water And that’s it!
Delicious falafel Buddha bowl ☀️ ☀️ Falafel: 1 can (15 oz) chickpeas 1 slice of bread 1 tbsp lemon zest 2 tbsp fresh chopped parsley 1 egg 1 tsp cumin 1 pinch chili pepper 2 tbsp oil
How to make: In food processor, First add bread and pulse till crumbled. Add rinsed chick peas, egg, cumin, lemon, chili, parsley, and pulse. Add two tbsp oil into skillet over medium heat. Make into tiny patties and cook each side (90 seconds) I’ll golden brown.
Salad: 2 cup spring mix Cucumber Feta Cherry tomatoes
Dressing: Tahini and lemon juice
Vegan strawberry banana smoothie bowl 🍓🍌🥝 1 large frozen banana (cut) 3 strawberries 1/2 cup soy milk 1/2 cup water So simple yet so delicious! Topped with: 1 kiwi 1 strawberry 1 tbsp chia seeds

Pre heat oven to 350 degrees Combine: 3 tbsp light cream cheese 3 tbsp Parmesan cheese 1 cup chopped spinach 3 tbsp lemon juice 1 tsp paprika 1 tsp minced garlic Marinate rub- separate bowl combine: 3 tbsp olive oil 2 tbsp lemon juice 1 tsp thyme 1 tsp paprika 1 tbsp garlic Take 4 chicken breasts and soak each breast in rub for 30seconds-1min each. Separate spinach combo into 4 even groups and stuff each breast. Cook for 35 minutes!

Enjoyed this delicious meal tonight! 2 chicken breasts or tofu Cook in 2 tbsp olive oil 2 carrots 1 cup zucchini 1 red pepper 1 yellow pepper All steamed 1 tbsp minced garlic 1 tbsp minced ginger 1 tbsp onion powder 1 tbsp cumin powder 1/4 cup chopped chives 1/4 cup chopped shallots 2 packs of udon noodles Fry with the veggies for 4 minutes Add 1/3 cup honey garlic stir fry sauce Cook with sauce for 1 more minute 1 cup of salad mix then add your stir fry Top off with 1/3 cup cherry tomatoes 1 tbsp sesame seeds!
