The flavors and textures in this Easy Chicken Rice Layered Salad go so well together. A satisfying and refreshing salad is made with layers of soft chicken, fluffy rice, fresh vegetables, and a creamy yogurt dressing. For a quick and healthy lunch or dinner, this is great.
Ingredients: 2 cups cooked chicken breast, diced. 2 cups cooked white rice, cooled. 1 cup cherry tomatoes, halved. 1 cup cucumber, diced. 1/2 cup red bell pepper, chopped. 1/2 cup green bell pepper, chopped. 1/4 cup red onion, finely chopped. 1/4 cup fresh parsley, chopped. 1/4 cup feta cheese, crumbled. 1/4 cup black olives, sliced. 1/4 cup Greek yogurt. 2 tablespoons mayonnaise. 1 tablespoon lemon juice. 1 teaspoon olive oil. Salt and pepper to taste.
Instructions: As the first layer, put the cooked chicken and rice in a large bowl. Cut the cherry tomatoes in half and place them on top of the rice and chicken. Diced cucumber, red bell pepper, green bell pepper, and red onion are added to the next layer. On top of the salad, put some chopped black olives, fresh parsley, and crumbled feta cheese. Get a small bowl and mix Greek yogurt, mayonnaise, lemon juice, and olive oil with a whisk. This will make the dressing. Pour the dressing over the salad that has been layered. Add pepper and salt to taste. Put it in the fridge for at least 30 minutes before serving so the flavors can mix. Just before serving, gently toss the salad to make sure all the layers are mixed. Enjoy! Serve cold.
