These Mexican Doughnuts are a delightful treat with a hint of cinnamon. Perfect for a sweet snack or dessert.
Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp salt. 1/2 tsp ground cinnamon. 2 large eggs. 1/2 cup milk. 2 tbsp melted butter. 1 tsp vanilla extract. Vegetable oil for frying. 1/2 cup granulated sugar for coating. 1 tsp ground cinnamon for coating.
Instructions: In a mixing bowl, combine flour, sugar, baking powder, salt, and 1/2 tsp of cinnamon. In another bowl, whisk together eggs, milk, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until a dough forms. Heat vegetable oil in a deep fryer or a heavy-bottomed pot to 350F 175C. Roll out the dough on a floured surface to about 1/2-inch thickness and cut out doughnut shapes using a doughnut cutter or a round cutter with a smaller hole in the center. Carefully place the doughnuts in the hot oil and fry until golden brown, about 2-3 minutes per side. Use a slotted spoon to remove them from the oil and drain on paper towels. In a shallow bowl, mix the remaining granulated sugar and ground cinnamon. Roll the warm doughnuts in this mixture to coat them evenly. Serve the Mexican doughnuts warm and enjoy!
