A Paleo take on the traditional carbonara recipe, made with zucchini noodles rather than pasta. This dish is a satisfying and healthy substitute, as it is flavorful and creamy.
Ingredients: 4 slices of bacon, chopped. 2 zucchini, spiralized into noodles. 3 eggs. 1/4 cup coconut cream. 1/4 cup nutritional yeast. Salt and pepper, to taste. Chopped parsley, for garnish.
Instructions: Cook the chopped bacon in a skillet over medium heat until it becomes crispy. Remaining rendered fat in the skillet after removal and setting aside. In the skillet with the bacon fat, add the spiralized zucchini noodles and cook for 34 minutes, or until they are just tender. Whisk the eggs, nutritional yeast, and coconut cream together in a bowl. Add pepper and salt for seasoning. Over the zucchini noodles in the skillet, pour the egg mixture. For two to three minutes, or until the eggs are cooked through and the sauce has thickened, stir continuously. Add the cooked bacon pieces and stir. Before serving, garnish with chopped parsley.

This creamy and delectable Red Lentil Hummus is a healthier alternative to traditional hummus. It's high in protein and fiber, making it an excellent snack or appetizer. The lentils give it a lovely reddish hue and a slightly nutty flavor that complements the tangy lemon and garlic perfectly. It's great as a dip or spread.
Instructions: Bring the lentils and water to a boil in a medium saucepan. Reduce the heat to low and continue to cook for 20-25 minutes, or until the lentils are tender and most of the water has been absorbed. Remove from the heat and set aside for a few minutes to cool. In a food processor, combine the lentils, tahini, garlic, lemon juice, olive oil, cumin, paprika, salt, and black pepper. Scrape down the sides as needed to ensure smoothness. Transfer to a serving bowl and sprinkle with parsley. With pita bread, crackers, or vegetables, serve.

This homemade grapefruit marmalade is a tangy and delicious spread that goes well with toast, biscuits, or scones. It's made with just a few simple ingredients and no special equipment. You can eat it immediately or save it for later.
Instructions: Combine the sliced grapefruits, lemon juice, lemon zest, and water in a large saucepan. Bring the mixture to a boil over high heat, then reduce to a low heat and continue to cook for 45 minutes to an hour, or until the grapefruit rinds are tender. Remove from the heat and stir in the granulated sugar until completely dissolved. Bring the mixture to a boil in the saucepan over medium-high heat, stirring occasionally. Cook for 20-30 minutes, or until the mixture thickens and reaches 220F 104C on a candy thermometer. Remove the saucepan from the heat and set aside for 5-10 minutes to cool. Fill sterilized jars with the marmalade, leaving 1/4 inch headspace. Seal the jars and process them for 10 minutes in a boiling water bath. Allow the jars to cool completely before storing them in a cool, dark place for up to a year.
