salt isn’t technically a spice. spices come from plants and are used to add flavor to food, whereas salt was originally obtained from seawater and used to preserve food. by drawing moisture out of the food to the surface where it could evaporate, it also drew the natural flavors to the surface and made them more present on the tongue, but that’s incidental to its use as a preservative.
