To the extent that "rainbow capitalism" refers to companies celebrating pride, I don't think it's just a reflection of society or empty pandering, I think it's good. We (Americans) live in a capitalist society, and so the actions of corporations within the system of capitalism have an effect on society.
Somebody wearing a trans pride pin helps create an inclusive atmosphere and shows trans people that they are not alone; a store selling a trans pride pin has a similar type of effect.
A writer including a gay character in their story can help to normalize being gay as just another part of the world; a company including a gay couple in an advertisement has a similar type of effect.
In general, people voicing their support for the LGBT community and creating a visible, positive environment for LGBT people has a positive impact on society, and that doesn't disappear when you replace "people" with "companies."
(There are valid criticisms of how companies celebrating pride may be hypocritical in their other actions, how marketing directly to LGBT people can be exploitative, etc.; I am not talking about that.)

I was talking about this with a friend but a really interesting cultural shift over the last ohhhhhh ten years maybe is that many people in fandoms view themselves as stakeholders and not audience members. Because of that, they think that the fandom should be running things, or at least have an acknowledged say in how something is run. And every reminder that they are not in control, no matter how small, bothers them.
