Greek Lamb Burgers with Kale
I found the very simple recipe for lamb burgers in Amanda Cross's 'The Low-carb Cookbook'. My boyfriend had a copy in his flat for an unknown reason. I didn't find many recipes that I wanted to make, and there is quite a lot of talk of reintroducing carbs in the book so I am not really recommending it. But credit where credit is due, these lamb burgers were tasty!
I didn't have exactly the right measurements, but for 2 people 400g of lamb, 50g pitted olives chopped, 25g of crumbled feta cheese and some salt all mixed together was plenty. You then rest the wee burgers for 10 minutes in the fridge, covered. We made 4 small burgers. You then grill them for 7 minutes on each side... mmm.
Maybe you could oven bake them or fry them for a bit more fat! Extra delicious and on plan.
For the kale side I boiled a bag of kale for 6 minutes, drained it and set it aside. Then, in olive oil, I fried some mushrooms, pine nuts and feta in the pan until the mushrooms were softened an added the kale back in for a mix and reheat. It was really nice with the burgers.
Delish dinner!
HFLC diet at Nandos? Sort of!
It is always a challenge to find something on the menu when you are low carb dieting. My mum, sister and I went for the whole chicken sharer at Nandos. You have to pick two sides at least, a multitude of empty calories are on offer. We avoided the chips and bread items and went for the garden salad (not pictured) and the macho spicy peas*. Yum!
*peas are always a borderline vegetable for me, at a reported 14g of carbs per 100g they are off plan, but I think it was the best choice on the menu. They are at least nutritious!
Peppers stuffed with tomato, feta, pine nuts, mushrooms and courgette, with a olive and baby leaf salad.
A good tip for dressing your salad is to use malt or white vinegar instead of balsamic. It gives you the same bite without adding sugar
Baked white fish with capers and plenty of asparagus
If you are organised, there is nothing more delicious than a low carb dinner
Goats cheese, bacon, pine nuts and capers salad.

I'm back to making myself delicious lunches insted of just eating cheese slices and deli meats every day.
Moussaka with a twist here, as Delia uses minced lamb to stuff aubergines in her own version of a Greek classic.

Just posting a couple of my recent meals for anyone looking for inspiration.
Pine nut and feta omelette with buttery cabbage is a fave.
I am quite pleased with my hflc hangover food; fried tofu 'chips' with mayo for dipping. I seasoned the tofu with salt, pepper, garlic, chilli and sesame seeds, I shallow fried them in coconut oil... so good!
I am not vegetarian but I do like a change from meat from time to time.
Mmm Autumn food! I baked a harlequin squash with lots of coconut oil and garlic. totally delish! Is a squash naughty? It is a veg grown above the ground... a seasonal treat!
Aubergine lasagne is an absolute hero. It was a bit watery but i think i will remedy this once my dehydrator arrives. I will make storable dried aubergine lasagne sheets! yeees
Yeeees. Mum and Dad have been visiting Lincolnshire and have brought back delicious Lincolnshire sausages! The best gift. Hopefully not secretly high in carbs. Also I should try and stop grilling things.... maybe I will bake the sausages in foil inside the George Forman! Adaptation!!
I haven't got a picture of lunch but I went to Morrisons... What a great shop! The produce section is immense, the deli is fantastic and I was even able to get something cheap from the salad bar! I ate some fresh coconut (so good), a couple of olives, my salad box and waaay too much cheese that was on offer haha. Maybe a 1000 kcal lunch? oops I got over excited in that shop!
But I made up for it with dinner. I made a soup using a leftover baked chicken thigh, a fennel bulb (my first ever, thanks Morrisons!), 2 onions, butter, coconut oil, salt, chilli flakes, cabbage, garlic and mange tout. Delish!!! Portions enough for my next couple of days at work :D doing it right!

I recently went to Iceland with a couple of vegetarian pals. It was mainly a week of eggs, cheese and avocados. But I did get an excellent meal at Kex Hostel. A nice big fillet of fish, fried in butter, served with almonds. I had a cream, bacon and mushroom side. So good!
Tis the season to pick blackberries! 10g carb per 100g.... okay as far as fruit goes and to eat as a treat! And of course they get served with double cream. Picked these bad boys down in South Queensferry, Edinburgh. Quite delicious but teaming with bugs that I had to drown :( I couldn't quite get the image of them out of my head when I was eating the berries
This is a left over portion from a very successful recipe experiment. After watching an Australian diet program on television, I think called Downsize Me, I was inspired to make a mince and egg bake.
Serves 4
Ingredients:
6/7 eggs
100ml whole milk
450g mince
2 onions
3 cloves of garlic
medium bag of beansprouts
half a broccoli
70g lardons
salt and pepper
generous sprinkle of chilli flakes
100g of cheese
Brown the mince, lardons, onions and garlic in a non stick pan. Pour into a 2" deep (at least) baking dish (mine is about 8" x 13" big). Mix in the broccoli and beansprouts. In a bowl, mix the seasonings, milk and eggs. Pour this mixture over everything in the baking dish. Top with cheese and bake for about 30 minutes on a med-high heat until firm and golden.
Delish! I'm sure there are many ways to reinvent this dish. I went for beansprouts because they were on offer and broccoli because I had it.
I just watched a diet doctor lecture, I didn't realise that milk is fairly high carb, so maybe substitute in double cream

Breakfast- a cold cheese omelette that I took out with me in the morning as a sort of travel breakfast and a full fat latte, no sugar obvs
Lunch - chicken baked in cream cheese, double cream, cabbage, garlic, jalepenoes and their brine and basil.... delish!
Snack- one singular cheesestring
Dinner- same as lunch
3 cups of tea with whole milk spread throughout the day
I went swimming early this morning so I had to be prepared for the aching post-swimming hunger. This lead me to make an omelette the night before... smart but also a bit gross. It was cold and moist from having it in the fridge overnight and putting it into the fridge while it was still hot.. silly me.
Have I overdone the whole cream thing? maybe... more veg tomorrow I promise. Managed to restrain myself to just 1 cheesestring today so that's an improvement haha.
