Ever been so insanely hungry that you’d wolf down anything in sight? So ravenous that if the last bowl of food you had, accidentally fell, you wouldn’t blink twice before eating it off the floor? (No, that didn’t happen to me - ok maybe it did in 1993 😏). Well, that was me today. I didn’t get my hands on enough food and being on Keto, I didn’t have the liberty of eating whatever was in sight. (Yes, yes, I know I could have taken my own food to work or ordered something substantial, but it was a crazy, early work day and that didn’t happen). Suffice it to say that on my way back home, when I caught a whiff of that barbecued chicken you seem to get on every street corner nowadays, my mouth started watering and I decided to stop. 🤤My go to snack when I’m hungry is peanuts (in moderation, yes yes) and I thought of this crazy combination of chicken tikka pieces in my Keto peanut bhel. It must have been hunger (yes, let’s blame the hunger) but I pulled out every possible vegetable I could find in the fridge and this is what came up. Don’t even ask me to name it. Well, if you really insisted, perhaps I’d call it chicken tikka keto bhel. 😬But whatever you may call it, this strange combination of bean sprouts, cucumber, cherry tomatoes, radish(!), spring onions, cilantro, cabbage, mint, green chilli, onions, peanuts, chicken tikka and mint dressed with lemon juice, salt, stevipepper, chilli powder, olive oil and mint chutney sure was DELICIOUS. Don’t judge me - but after eating most of it, I added a nice big spoonful of cream cheese and it made the whole thing even better. So let me know if you ever try my crazy concoction and if you happen to like it. This was one of those hodge podge mixtures that will fulfill all your Keto Salad + Chaat dreams. So, Salaaat?
