Honestly pronounce it however you want. I studied classics for four years got a degree and I still don’t know what I’m doing.

Minthe can also be spelled as Menthe, or Mentha. Most of my classical books are not in my apartment, but according to wikipedia cited back to this Perseus page, Strabo has her name spelled as Minthe, and the greek is spelled Μίνθη or Μένθη. The presence of Θ means that the TH is pronounced, but her story is very closely tied with the actual planet of Mint, so it makes sense to pronounce it without the Θ . BUT, in the greek on the Strabo, it’s spelled as Μίνθης, and the η would be pronounced the same as the word chase. Like Min-thase. But that is just my research and prior knowledge. Μίνθης is the Genitive, and if you want more information on this, this Wikipedia page actually has some good info if you scroll down to the declensions and pronunciations. But maybe you know all of this or I’m just spewing nonsense who can say.

TL/DR Greek nouns have a lot of endings, and all are equally correct depending on the case of the word in the specific sentence, pronounce Minthe however you want.
