jackie kennedyâs waffles
iâve actually made this recipe several times, but somehow it never occurred to me to put it on my blog.
œ cup (1 stick) butter
1 tablespoon (12.5 grams) sugar
2 eggs, separated
1 cup and 1 tablespoon (132 grams) cake flour
1 cup (235 ml) buttermilk
1 pinch salt
4 teaspoons (31 grams) baking powder
iâm always shocked at the amount of baking powder that this recipe calls for, but it always turns out well.
step one: using an electric mixer, cream butter and sugar. add egg yolks one at a time until fully mixed. alternate between adding flour and buttermilk in small increments until blended. stir in salt and set aside.
step two: in another bowl, beat egg whites until they form stiff peaks. fold the whites into the batter and then fold in the baking powder. the mixture will be thick and fluffy.
step three: cook according to your waffle makerâs instruction manual.

my thoughts: these waffles are a favorite of mine and i canât think of anything bad about them.
