This low carb strawberry sauce is perfect for adding a burst of fruity flavor to your favorite keto desserts or breakfast dishes. It's sugar-free, easy to make, and bursting with fresh strawberry taste.
Ingredients: 2 cups fresh strawberries, hulled and sliced. 1/4 cup water. 2 tablespoons granulated erythritol or any keto-friendly sweetener. 1 tablespoon lemon juice. 1/2 teaspoon vanilla extract.
Instructions: In a small saucepan, combine the sliced strawberries, water, and sweetener. Cook over medium heat, stirring occasionally, until the strawberries soften and release their juices, about 5-7 minutes. Remove from heat and stir in lemon juice and vanilla extract. Using a blender or immersion blender, puree the mixture until smooth. If desired, strain the sauce through a fine mesh sieve to remove seeds. Allow the sauce to cool before serving. Store any leftovers in an airtight container in the refrigerator for up to a week.
