Healthy salad: grilled spicy chicken with apples and raisins

This low-fat energy lunch is perfect prepared ahead for your fresh lunchbox, bite at home or even for a picnic.The balance of sweet apples and raisins with fragrant curry elevates chicken salad to a new level.
Prep Time: 10 minutes
Ingredients:
1/4 cup low-fat mayonnaise (or substitute with yogurt)
1 teaspoon curry powder
2 teaspoons water
1 cup chopped skinless, boneless grilled and spicy chicken
3/4 cup chopped sweet apple (about 1 small)
1/3 cup diced celery
3 tablespoons raisins
1/8 teaspoon salt
Preparation:
Combine mayonnaise (or yogurt), curry powder, and water in a medium bowl, stirring with a whisk until well blended. Add the chicken, chopped apple, celery, raisins, and salt; stir mixture well to combine. Cover and chill.
