There was a time when I was into foods that were proxies for the original. Substitute meat, substitute sugars, substitute everything.
I thought it was better for me.
But now, I'm more inclined towards the most authentic version of itself. The real thing. Because the real thing, when unfettered with the additives and weird preservatives, is pretty amazing.
Like have you ever tasted a real tomato? It's vibrant and quizzically meaty. A real lemon? Sweet whilst still being edgy with tartness.
And maybe this near simultaneous realization and transition can be extrapolated to more. If not, that's okay, too.
