Ingredients: 2 cups diced boiled potatoes. 3 hard-boiled eggs, chopped. 1/2 cup diced pickles. 1/4 cup mayonnaise. 1 tablespoon Dijon mustard. Salt and pepper to taste. 8 slices bread of your choice. Lettuce leaves optional.
Instructions: Diced potatoes, chopped eggs, and diced pickles should all be put in a large bowl. Mayonnaise and Dijon mustard should be mixed in a different small bowl. Mix the mayo and mustard slowly into the potato, egg, and pickle mixture until everything is well mixed. Add pepper and salt to taste. If you want, you can lightly toast bread slices. Spread the potato salad mixture out evenly on 4 pieces of bread. If you want to make a sandwich, put lettuce leaves on top and then cover with the rest of the bread slices. On a diagonal, cut the sandwiches in half and serve.
