Yk there's actually something symbolic about his transformation looking like a fleshy abhorrent mess if you take the snake motif as representing his work in medicine. Gideon always hides his true nature behind a mask. He may pretend to be a professional doctor treating patients at Rhodes Hill, but behind the curtains is a ruthless monster who conducts inhuman experiments on people he's supposed to take care of
