Pumpkin Spice Streussal Waffles

Keto+Nut Free+low carb

Recipes

For waffles

3 tbsp coconut flour

4 eggs

1 tbsp pumpkin spice

1-2 tsp splenda

.5 tsp kosher salt

Instructions

Whisk ingredients together, pour half into center of waffle maker, close and after 3 minutes or your machine notifies you, pull them out, paste out pumpkin butter, sprinkle streussal.

For streussal

.5 cup coconut flour

2 eggs

2 tsp vanilla extract

2 tbsp pumpkin spice

Instructions

Whisk all ingredients, bake (ahead of time is best), you can also microwave them for 5 minutes on paper plates, i used 1000 watt microwave.

For Pumpkin butter (will make just over 16 oz)

1 can pumpkin puree

4 tsp, packed

1 tsp lemon juice

2 tbsp pumpkin pie spice

Instructions

Combine in medium pot simmer on low- medium heat until thick (butter texture)

Quick salad for lunch, it isn't the prettiest but its blend of flavors were amazing.

Chicken was marinated in onion, garlic, paprika and chili powders.

Diced red onion, sliced jalapeño, sliced sweet mini red pepper, sliced habanero pepper, on top of organic chopped kale tossed in avocado cilantro salsa.
