Omg yummmm Made this yesterday with my little cooking companion - it was lots of fun and very yummy. For the first time, i got the texture of the crust perfectly right!
My daughter has issues with celery, so for dinner tonight I cooked some up in coconut oil in a small frying pan and blended it into our mashed potatos. She loved it and cleaned her plate! Served alongside some oven baked carrot "chips", steamed broccoli and a fragrant take on a large pear! Coming soon to my blog, along with the other recipes I've been intending to update it with!
Tofu marinade: soy sauce, agave nectar, peanut butter Lentil, sautéed onion, mustard, balsamic vinegar, with roasted... Er, slightly burned... Sprouts and tomatos
This is truly the ultimate porridge. For the smoothie: 1 tbsp adzuki beans, 1 tbsp protein powder, 1 tbsp coconut yoghurt, 1/3 rice milk, 2 squares melted vegan cashew chocolate, 1 tbsp peanut butter, 3 tsp cinnamon For the "porridge": all the seeds you can imagine, pistachio, peanuts, raisins, gogi berries

Delicious lentil, ginger, celery & curcumin curry with salad (dressing: juice of half a lemon) and white rice 🌾 A perfect - reward after a work out and - way to start off my fast!
Very yummy, protein rich burger for lunch today - quinoa, red lentil, diced + sautéed onion and gf bread... Served with avocado and salad with a drizzle of balsamic vinegar: simple, healthy and delicious! Note ; could totally substitute the bread with a bit of puréed potato or tofu to make it more healthy
My spooky daughter insisted on a Halloween themed birthday party, so this happened 🎉
I noticed all the mums who usually tease me about being "too healthy" (🎃) happily polished off the clementines! 😜 For a kids' party, there's really no reason to go overboard with snacks and certainly no need for junk food - unless *you* enjoy trying to moderate a bunch of sugar crazed, mood-swinging four year olds, which I sure don't! The snacks on offer were blueberries, small bowls of coconut based yoghurt, bananas, raspberries and clementines. The cake was brought out and presented non theatrically on the table towards the end of the party and most fams took a slice or two home. Next year we won't even do cake I dont think, no need for it. (There wasn't any need for it this year either - I got tricked by a walrus)...
