Wholemeal Pasta with Asparagus Carbonara somehow this post hid itsself in my drafts since may, but since I don’t want to withhold anything as delicious, here it is: What Wholemeal Spelt Pasta Tomato* Green Asparagus* 1 Egg* Cream* Olive Oil Feta Cheese Spices (Garlic*, Salt, Pepper, Nutmeg, galangal, black cumin) How Start by boiling the pasta in a pot of saltwater. Wash the asparagus, cut off 1-2cm from the end. Cut the rest in 3–5cm pieces and steam them slowly. Chop the garlic and roast it in a pan with olive oil. Wash and dice the tomato and roast it in the pan. Check with a fork if the asparagus is done and soft. Then add it to the pan, roast for about a minute, then douse in cream. Then add the feta cheese, let everything simmer a little until the cheese dissolved. On the side you can grind the spice mix and check if your pasta is done. If so – pour out the water. Remove your sauce from the stove and let it cool off a little. Crack up an eg and whip it up with a fork, quickly intermix with your sauce with the spices – it shouldn’t coagulate. Put your carbonara on the pasta – there you go.
