Paul helping Lestat find his faith again when they both wanted to be priests was kismet imo. They were always similar, and it's part of what drew Louis to him "for the first time -other than Paul, I find myself confining in another man." And while I don't think Lestat walked him off that roof, he definitely shook his faith -or broke it, that night at dinner, and Lestat knows what that feels like, what it does to a person. So of course Paul's death haunts him.( and having him accept his part in that before his own death is very in symmetry with the end of the episode where he acknowledges his part in the world ending. )

Because Paul's death did end the world, Louie's. and the grief of it is the source of his half human soul. an eternal reminder of how Lestat believes he always fails those he loves. So having Paul - The silver thread that connects and separates him from Louis, show Lestat his faith, his humanity his ability to be forgiven and loved and accepted still persists through his love for St.Louis, "could be." hands touch, and suddenly the birds are singing again.
