Pick your flavors—this jar is filled with wild Maine blueberries, maple syrup, and water. Five parts water, 1 part maple syrup, and a few healthy handfuls of berries.
Gather your yeast—that’s where the bubbles will come from. I chose Eastern Red Cedar needles. (True cedars are toxic, but Eastern Red Cedar is actually an edible juniper.)
The yeast on the juniper needles will feast on the sugar in the maple syrup, burping out carbonation along the way. After 4 days, you should have enough fermentation to enjoy it as Faerie Soda, and after 14 days it should be done fermenting and it will be Faerie Beer with about 5% alcohol by volume. Open the jar every day to let out the carbon dioxide that builds up, and be sure to stir or shake daily to make sure everything stays coated.
You can make this with any flavors and any yeast source. I hope you will love it (:
Lavender Faery Wine for Imbolc
Ingredients: 1 cup of milk per serving. 1 tsp honey ¼ tsp of vanilla extract ½ a cup of brewed lavender tea Lavender buds or cinnamon Steep lavender buds or any lavender tea in ½ a cup of hot water. The more tea leaves or buds you use, the stronger the lavender taste will be. Warm a cup milk on the stove; be careful not to boil or else it’ll froth up and make a mess. Once warmed, pour in the tea, honey, and vanilla extract. Serve in a teacup and sprinkle lavender buds or cinnamon on top.
