Beautiful things happened at Momofuku Nishi where the creamy textures and nutty, earthy, and salty flavors of Italian cuisine were combined with the crunchy, slimy textures and umami-ish, salty, and fermented-y flavors of Asian cuisine. I had the honor of visiting the amazing @teaandmilkny and learning how to make their signature Taro boba. They have raised the standard - it's not just powders anymore. The geniuses of boba discuss how they buy the taro root from the market, boil it and do some cool stuff with blenders and teabags, and turn it into tea. I was able to get a tour of the kitchen at redroosterharlem and it was so awesome. Here's a pic of me with Chef de Cuisine Mark Gandara and the sous chef, who was so kind to give me a tour. Thank you!! I had the Shrimp and Grits, the Hamachi Tostadas, the Smoked Salmon, and the Short Ribs! They were all so good and I hope to come back!!! And maybe even meet Chef Marcus Samuelsson one day!
