This is a bit specific, but could we have some hcs for how Aizen might react if he learned he'd left a child he didn't know about behind in Soul Society after he defected? Would he scheme to get it somehow or decide not to look back? Also would he treat a son or daughter differently?

This is going to be one of those very, very rare instances where everything did not, in fact, go according to keikaku. If Aizen were going to have offspring, he would meticulously plan when, with whom, and then dictate the path of that child’s life until they were either a weapon, a pawn, his heir, or all three.
For the child to be unknown to him means that the mother must be very crafty indeed, or have some outside help concealing the pregnancy and child from him. Let’s be real, it was probably Urahara and the kid was raised in one of those huge underground bases he loves building.
To say it rattles Aizen is an understatement. He’s a meticulous planner. Everything from his hairstyle down to what he has for dinner in six years, three months, and nine days is thought out ahead of time. Nothing can surprise him. Except, perhaps, random offspring popping up where he least expects it.
I like to imagine that it’s Gin who finds out, and tells Aizen about it with that signature wide smile on his face. Like, I know something you don’t know~! Gin cannot wait to inform Aizen that he’s a deadbeat dad.
Aizen’s first instinct is to pretend he knew all about it. This is not a man who admits fault or defeat, and he certainly wouldn’t allow his underlings to see him falter. The most reaction he gives is a lift of the eyebrow and a slow, smug, “Oh, really? How interesting,” in this bored tone that heavily suggests he already knows. Buuut, he doesn’t.
As soon as he’s alone or with a more trusted advisor (Ulquiorra) he makes plans to dive deeper into this little oversight. Even if he doesn’t plan to become Father of the Year, this introduces an unknown element into his machinations and he needs to accommodate for it quickly.
His plans will depend heavily on the child themself: age, gender, temperament, who else has been involved in their life. His first instinct is to take the child from their mother and bring them under his own control. That will stop anyone being able to use them as a lever against him.
If he can’t do that for some reason (Urahara), then he’ll go the second route of trying to insinuate himself into their life. This isn't new territory for him. He spent years playing the wise mentor role and digging his claws into people. Aizen’s child will have an advantage against this, however. They might have inherited his intellect, or have been fully briefed by Kisuke and Shinji since birth not to trust anything their father tells them.
Please allow a brief interval to imagine Kisuke and Shinji standing in front of a PowerPoint presentation entitled ‘Sosuke Aizen: Megalomaniac and Manipulator’ with just a whole ass baby as their audience.
Also, one must factor in that Aizen is not going to sit around and let someone else take credit for being this kid’s father. He’s going to make damn sure they know who he is and that they belong to him, one way or another.
