The Mirkwood "Immortal Broccoli" Orzo Bake
Confession time, we've had a broccoli in our fridge for..... a while. With a best before date that has long since passed, I honestly don't know how it's still in tact. I've decided it's basically immortal š I was going to throw it out last week but decided I could try and get it into a @tolkien-food-week dish.
I also have orzo in my cupboard so I googled "broccoli orzo recipe" and this was the first result. After 30 seconds of reading I decided it was worth trying due to simplicity. And it meets the "vegetarian dishes" prompt too.
Guys.... This is the best thing I've made in a while. The flavour is incredible. It's got garlic, cheese, red onions and pesto, and unlike Dwalin you will not be disappointed that it lacks meat.

⢠We did not have parsnips so we used radishes instead, it doesnāt matter, they just absorb the flavor of the soup
⢠We used purple, yellow and orange carrots
⢠We did not have parsley root, juniper berries, red chile pepper, or pomegranate so we left those out.
My husband made it, not me, but both of us and our 5 year old said itās one of the best meals heās ever made. And heās like, a really good cook.

Sooooo as y'all know (if you've been following my lotr trilogy audiobook posts), I'm going to the 25th anniversary extended binge of the Lotr trilogy this weekend! Those movies are extremely long (duh.) Rather than eat sub-par movie theater meals I made some really good hearty food to take! I'll be packing vegetarian sandwiches on artisan bread too. Yes I will be having cake during Bilbo and Frodo's birthday party tooš„³š
First I made Lembas.
This is my second time making it and it's... special 𤣠again.
I made mine vegan with plant based butter and plant based whipping cream.
Then, I made Rohiran style root vegetables.
I used radishes in mine instead of beets. I also added a sprinkling of brown sugar to the top.
These hardy honey roasted root vegetables are inspired by the northern climate of the Kingdom of Rohan from The Lord of the Rings.
Lastly I made Shire coded roasted potatoes.
I didn't boil mine before roasting because I like them a little crispy at the edges. I also added vegan butter to them as well. I baked these for about 38 minutes at 425F. My potatos are also red because I like those better.

I'm very sorry to inform my very limited following that unfortunately I will no longer be baking. I tried. But alas it is not my calling.
Blueberry pancakes
Weāll ease into the recipes for this year. Iām not asking you to cook up a horrific Klingon dish this early in the new year! Instead, why not try these blueberry pancakes - we all know theyāre delicious, and so does Doctor Phlox (ENT: Unexpected). Unfortunately, T'Pol is not so keen, given that she had not yet got used to living with humans, let alone eating their food. Suspicious Vulcans aside, these pancakes are sure to please most visiting species who have dropped in for breakfast.Ā
I like thick, fluffy pancakes, so the batter I used is quite thick. If you prefer thinner pancakes, increase the amount of milk to get a thinner batter. I used fresh blueberries but you could certainly use frozen ones instead.Ā

Uttaberry crepes
When youāre in the middle of a diplomatic issue and two of your crew are missing presumed dead on an alien planet, itās no surprise you need to take a break every now and then and help yourself to some crepes. Uttaberry crepes as made at Quarkās, to be precise (DS9: Armageddon Game). Iām not sure about Captain Siskoās culinary choices because he orders this with a serving with chowder and Iām really not sure about crepes and chowder going together.
However, for now, weāll ignore Siskoās dubious meal and concentrate on the crepes. These crepes use tinned blueberries and I put some of the juice Ā into the crepes to colour them slightly purple (I figured this was appropriate for uttaberries - if youāve encountered different coloured uttaberries, please let me know!). You can also drizzle some of the juice over the top of the cooked crepes, and I like a squeeze of lemon too. Notwithstanding Siskoās gastronomic inventions, these crepes are well worth making.Ā

For the day after First Contact Day: Vulcan Mocha
Hooray, itās First Contact Day! We are one year closer to inventing Warp drive and meeting those wacky neighbours of ours, the Vulcans, for the first time. Iām not sure how the Vulcans would have responded, but I am sure that for Zefram Cochrane, the party would have continued long into the night (Star Trek: First Contact). I am certain that many cocktails were imbibed and pierogis consumed.Ā
Iād like to think that when the Vulcans saw that Cochrane was a bit worse for wear the next morning, they provided him with appropriate sustenance to help him recover. At the top of the list would have been the Vulcan Mocha, with enough coffee to get the brain going but with enough sweetness to make it palatable first thing after a long night. If you donāt find it sweet enough with the chocolate, you can also add some sugar, as Harry Kim preferred (VOY: Non Sequitur).

Yamok Sauce
Yamok sauce, that beloved Cardassian condiment which goes with everything from asparagus to sand peas, and also useful to trade for self-sealing stembolts (DS9: Progress). I can understand its popularity and the need to have vast quantities of it around - although perhaps not as much as Jake and Nog ended up with.Ā
This is, of course, a variation on hollandaise sauce, which, like Yamok sauce, goes with everything and can be varied in almost infinite ways. If youāve not made this type of sauce before, do not be afraid! While it involves constant whisking it is made in a few minutes, and if it does split, can be easily brought back together.

I made gingerbread people, they were a bit thicc and soft rather than snappy like normal gingerbread but it was still really good. I was a bit of an idiot and forgot to take a single picture, So just trust me that they exist. Well they existed. We ate them all š¤£

I had to substitute some of the ingredients but they turned out amazing! - once cooled they're nice and hard on the outside and soft and gooey on the inside... Yum!
(edit: now that they have cooled, they have the consistency of a cake rather than a cookie... Anyone know why?)
I had some trouble with mixing the egg and vanilla extract into the sugar-butter mixture, my batter split. Very badly.
Does anyone know why?
I used a whisk (non electric) to "beat" the mixture like it said but I honestly have no idea what causes the mixture to split...
Also I didn't have a sieve for the flour, I didn't notice a difference but maybe I would if I tried the recipe with a sieve. ĀÆā \ā _ā (ā ćā )ā _ā /ā ĀÆ
Anyways, thank goodness this hasn't put me off of baking. I wonder what I'll make next š¤ ... Preferably something which uses up granulated sugar and plain flour because I have a lot of that left over š
