Helllloooo! And welcome to day one of the 12 Days of Baking! As I am sitting here writing this post, our tree is up, and so are a lot of the decorations inside and outside the house. I LOVE how cozy the house gets with all the Christmas lights lit. When do you put your tree up? We usually put ours up the weekend after Thanksgiving. It’s something I look forward to every year.
I wanted day one to be all about the celebration of putting up the Christmas tree. Ever since I can remember, it has been my family’s tradition to order a big cookie cake, decorate the Christmas tree, and then have a slice of cookie and milk while enjoying the beautiful glow coming from the decorated Christmas tree. Such a fun tradition. These are also really fun to take to Christmas parties! They’re festive, and it’s an easy way to feed a lot of people!
Here is the oldest one that I can find. I got married this year, and I wasn’t planning on being there to decorate the tree with them . Then I crashed their party and they added my name on. haha

Now that I’m married and love to bake, my hubby and I have kept the tradition going. The only difference is now, I make the cookie myself, instead of ordering one! This cookie is so delicious, and I love that it can be made super thick!
I wish I could find all the pictures. This is 2014.
To make these cookie cakes, all you have to do is take your favorite cookie recipe, and press the dough into a greased cheesecake pan. You can also use a round cake pan, but I like how easy it is to get the cookie out of a cheesecake pan. Just make sure the pan is greased really well, and that it’s cooled before you try to remove the cookie from the pan! I use a homemade buttercream for the frosting, but you could definitely just use store bought frosting. If you don’t have a favorite cookie recipe, the one on the back of the Toll House chocolate chip bag is always really tasty! And if you’ve never made buttercream frosting before, TRY THIS ONE from Magnolia Bakery! I have tweaked my recipe since, but that is the first recipe I used to make buttercream! Also, if you don’t feel like making your own, we always got our cookie from The Great American Cookie Company, and they’re SO TASTY!

‘Tis the season for all things pumpkin! Thanksgiving is 10 days away, so it is time to start thinking about that Thanksgiving dessert table. In my opinion, you HAVE to have a pumpkin roll, and a pumpkin pie at your dinner. It’s just how it’s supposed to be.
Pumpkin rolls always get a bad rap for being a little tricky to make. The main issue is getting that perfect swirl on the inside, while not cracking the outside of your pumpkin roll. Last year, I made about 12 pumpkin rolls in one week, and I have learned a few tricks to help you get the perfect looking pumpkin roll. Now, I’m not saying that mine never crack, because I’ve definitely had to remake peoples orders because of one of those pesky cracks. But, I have found that the cracks are less frequent if you put a little extra TLC into your pumpkin roll.
I don’t use a special recipe that I came up with myself, I just start out with this one from Libby’s. Although, I do add in some more spices than it calls for, just to amp the flavor up a little bit.
MY PERFECT PUMPKIN ROLL TIPS
Use a slightly bigger sheet pan than a jelly roll pan. I use an 11 5/8 x 16 1/2 ” sheet pan, lined with my Silpat mat . I find that a thinner cake, tends to crack less for me than when it is thicker from using a jelly roll pan. You don’t want it too thin, so I just do about an inch bigger pan size. Also, I like using a silicone mat, or cutting parchment paper to just fit the bottom of the pan, so it gives you smoother edges, and the edges of your cake have less chance baking into the crinkled up edges of parchment paper. Just make sure to add extra butter to the sides of your sheet pan to prevent sticking. Also, make sure to butter, and add flour to your mat, and sides of your pan!
When you lay down your tea towel, always sift your powdered sugar onto the towel. Sifting prevents your powdered sugar from creating lumps, that might cause your cake to crack. You want the smoothest possible surface to place your cake onto.
After you have placed your hot cake down onto your powdered sugar towel, take off the mat or parchment paper, and then sift more powdered sugar onto the unpowered side of your cake thats facing up. This will make sure that all parts of the cake that will be touching the towel will be dusted to prevent sticking.
All right, those are my pumpkin roll tips! Like I said, sometimes cracking just happens. But, I’ve found that with these tips, it happens a lot less often! Let me know if you try any of these tips, or if you have tips of your own! I love learning new baking tricks!
