True! And this is exactly what I am talking about when I say these works echo each other and reflect a certain same mentality - that I will dare say is a very American conception of fairytales.
As you said: in the 10th Kingdom, Snow-White is the main and most important fairytale since it is the one that "starts" the plot, and that the plot imitates and repeats (the prince descendant of Snow-White, the evil queen being the heir of Snow-White's own evil queen, the heavy use of mirrors) - to the point Snow-White herself appears as a powerful spirit/benevolent ghost to guide the hero. In Once Upon a Time, as you said, Emma is the daughter of Snow-White, who is one of the main characters, and the series is heavily focused in its first seasons about her life and how her fairytale was the pivotal event in the Enchanted Lands. In the Sisters Grimm, Snow-White starts out as a mere secondary character, but she is still very important due to how she is present as this perfect and benevolent Everafter who is in fact one of the first real "good" Everafters the sisters meet (it was notably a big plot point in the second book since it was about the racism allegory of hating all the Everafters, and she was the one that blatantly told the girls "We aren't just all bad guys - Everafters are good person like me too". And of course, her own side characters (like the Magic Mirror or the Evil Queen) play a HUGE part later on. As for Fables, you might not have read it, but Snow-White is also one of the main characters, and in fact she is the first female character of the franchise and the plot also heavily relies on her.
All of that being said, why do I say this reflect the "American-ness" of fairytales? Because Snow-White's preponderant place within fairytales is a specific American trait. It isn't just American - in France for example Snow-White also occupies a large place, for example in the world of BDs or parodies or children's books - but it is a trait that started/comes from the USA due to one specific thing. Disney.
The American depiction of fairytales cannot be considered without Disney's influence; Disney's movies weren't just a huge landmark and a classical part of the American cinematic culture - it forms its own "corpus" and its own set of fairytales, that can be considered worthy rivals of the Grimm or Perrault tales in term of mass-spreading and cultural influence. And Snow-White's American image is heavily tied to the first Disney movie, "Snow-White and the Seven Dwarfs", which ingrained in Americans' minds this idea of Snow-White as the "emblematic" fairytale, and especially of her as this very powerful force of benevolence and this pure character. The reason Snow-White is so prominent in those "Americanized" works, especially at the time, was due to how prevalent and important she is in the Disney fairytales. The USA barely knew the story of Snow-White before Walt Disney made a movie about it (remember, people thought the movie would fail precisely because "No one is interested in some vague dwarf story")., and as such for quite a long time all American depictions of Snow-White were aimed at Disney's version more than the Grimm's.
Fables, like Once Upon a Time its "successor" somehow, both worked at subverting Snow-White's traditional Disney's ideal of a sweet, innocent, girly, helpless character, turning her into an independant, strong woman who knows how to fight and survive - though both for very different reasons. Once Upon a Time is a Disney product and so they worked on updating and modernizing their own character, while Fables is an anti-Disney work that was mostly trying to get away as far as possible from the Disney myth. Meanwhile, on the other hand, The 10th Kingdom and The Sisters Grimm both directly played the card of the "Disney Snow-White" by presenting them as this sort of embodiment of pure goodness - from her being a literal guardian angel in the 10th Kingdom to her being the sort of "only good one" of the Everafters in the Sisters Grimm.
