A good gratinee on a cold day is the best. ONION SOUP is a simple recipe and yet quite tricky as over caramelized onions have a bitter taste that will ruin the dish. So take your time and stay close to your onions. Sweet onions mixed with red onions have a delicious flavor.
Peel and slice 8-10 onions. Sprinkle with salt, black pepper, 2 teaspoons of sugar and 1 heaped tablespoon of flour.
Heat butter and add onions stirring occasionally until translucent with a light brown colour.
Make a bouquet of thyme and rosemary and add to the onions.
Add two drops of Worcestershire sauce and 6-8 cups of beef broth or vegetable stock which I personally prefer.
Rub slices of baguette with 1 clove of garlic and grill till crisp.
Place two slices in ramekins and pour ONION SOUP on top.
Grate Gruyere cheese and add on top.
Place in a hot oven until melted and grilled.
Sprinkle chopped chives on top and serve.
