Debating a 24h fast soon, I really want to up those ketone levels
I've also started drinking loads of hot water and I feel it helps me. After waking up, after meals, between meals. Because the food I eat feels rich and is so rich in fats, hot water help me a lot. It's something nice about hot water, that is different from tea that I really like.

Vegan (almost) No-Carb Keto No-Bake Coconut Cheesecake (<2g carbs per slice)
Nutritional Values (per slice): 352 calories: 35g Fat, 5g Protein, 2g Carbs (1g Fibre, 1g Sugar)
Ingredients:
Base: 260g Almond Grounds, 40g Coconut Desiccated, 100g Erythritol (Sukrin), 200g Coconut Oil
Top: 270g Creamed Coconut, 1L Almond Milk Unsweetened, 10g Agar Flakes, 100g Erythritol (Truvia), 35g Desiccated Coconut (sprinkle on top)
Instructions:
Melt the Coconut Oil for the base in the microwave (1 minute should suffice) and then in a bowl mix with Ground Almonds, Desiccated Coconut and Sweetener untill well blended. Then pour in a spring pan and leave in the fridge for about an hour until it properly solidifies.
Meanwhile, in a pot on medium heat, put the creamed coconut and the almond milk and keep mixing until they dissolve together. At that point add the sweetener and repeat, while stirring. least but not last, ass the Agar and from this moment on NEVER STOP STIRRING for about 10 minutes. Then turn the heat off and let cool.
When it has cooled down enough pour in the springpan ontop of the base and place in the fridge for at least 6/8 hours (always better overnight)
Before serving, sprinkle remaining desiccated coconut on top.

I was challenged to make a Vegan-Friendly keto dessert, and here it is! Agar works as gelatin basically, just without the calories and incidentally without the animal origin so works better for every reason.
Seemed like a good comeback recipe to bring back this blog to what this is supposed to be rather than personal issues or troll management. Sorry for the distractions ;)
Homemade Riced Cauliflower (12 cal per ½ cup)
I decided to try my hand at making my own riced cauliflower since I had a bunch at home, and it turned out so delicious I’m proud of myself!! I used part of my cauliflower head for my mashed cauliflower recipe, so this one yielded about 1 ½ cups. Green giant sells frozen riced cauliflower (which is so delicious), so if you do not have time to make your own, that is always an option. Theirs is only 10 calories per ½ cup and it contains slightly more protein, vitamin c, calcium and iron, but there is more sodium, and carbs to theirs. In general the differences are minimal.
Ingredients:
1 cauliflower head
Process:
Separate cauliflower florets and chop off the stems
Place in blender or food processor and pulse/chop until you get a grainy, rice consistency
Transfer to pan to fry (I used a minimal amount of coconut oil, but you can use other kinds or butter)
Fry, stirring frequently, until soft and some of the cauliflower browns
Add optional seasoning (I prefer turmeric and a bit of sea salt)
Serve and enjoy!

Staying strong
For the first time in 8 days, today I felt hungry! I was puzzled by the feel I suddenly got in my tummy... I've fasted in the morning and for lunch a had 3 x mini cauliflower quiches with some salad plus a protein smoothie. Around 6pm I was getting fidgety and being our, I was tempted by every restaurant I was passing by.
Lucky, I've stated strong and survived till home! Not sure if this was cause by a lack of fats and protein or by too many carb from lunch? Had a keto strip test just now and it shows high levels of ketones 👍
Let's hope tomorrow will be better, no hunger pangs 🙏
Week 1 - It's measuring day!
One week since I've started keto woop woop
As I've mentioned before, the first few days were tricky and I was eating way too much fat, as my Cronometer app wasn't set properly.
I know I'm in ketosis as I've done several tests and they all show that, plus I feel better in my self. My cravings are fewer and less intense, I can control my appetite more, I feel full most of the time, my energy levels are more even during the day.
So, here are the measurement, one week in:
- under boobs - 78cm
- thigh - 56cm
- hips - 98cm
- calf - 36cm
- boobs - 91.7cm
- arms 26.5cm
Super happy with the results!!!
I HAVE LOST AT LEAST ONE CM AROUND EVRY MEASURED AREA!!!
AND IT ALL SUMS TO 12.3CM!
Yes, I know this is water, I've done my research, but I am pleased with the results and I'm hoping it will continue!!

Let the cream cheese, strawberries, and butter sit at room temperature for about an hour to soften before continuing with the recipe. 2. Puree the strawberries using a small blender like the Nutribullet. Alternatively, you can mash them by hand, but the texture will be less smooth. 3. In a bowl, combine pureed strawberries, sweetener, and vanilla, stirring until well-mixed. 4. In a separate bowl, microwave the cream cheese for 10 seconds until very soft and pliable. This is an optional step, but it makes the cream cheese softer and more easily combined with other ingredients. 5. Add butter and cream cheese to the bowl with the strawberry mixture. Use an electric hand mixer and beat until well-mixed, ideally without any large cream cheese clumps remaining. 6. Divide the batter into 18 round silicone molds, smoothing the surface with a spatula. Freeze until solid, about 2 hours, before serving. Store leftovers in the freezer.

First week on Keto
It’s (almost) the end of my first week on the keto diet and I wanted to share this experience with the world :)
Today I became excited, as I looked in the mirror and realised that my face looks slightly slimmer and I have more energy.
I am all new to the keto diet. I have decided quite abruptly to start in, on Sunday afternoon, after I came home from an aerial fitness class, which made me realised my low level of fitness... also by coming across this very interesting article
I’ve started by reading this and this and utilising Cronometer app to track my intake. Funnily enough, I haven’t added my details properly, so the app was telling me I need to eat more fat, so Monday I stuffed myself with cheese and made the most buttery omelette ever...Thank Goodness by Tuesday I realised something wasn’t right and found what the problem was! the app was set at ‘maintain weight’ - which is my current weight, as I haven’t added my target!
After a Tuesday where I ate less but suffered by headaches and tiredness, Wednesday I was starting to feel very full and constantly thirsty. Since I started this, I am drinking and drinking and eliminating it all....
I am very curious how this journey will go.
There is a lot of research I still need to do regarding Keto, especially regarding my meals. I have been a veggie for eight years now, but I hope to transfer to vegan with this diet. One massive downside is that I cannot eat avocado, as I am allergic to them :( shout out to the vegan ketos out there who cannot eat avocado and found a replacement for this!
So far I have been having loads of cheese, soya milk, omelettes nicely cooked in butter and filled with cheese, loads of spinach. This evening I had the yummiest cauliflower with mayo - a comfort food for me and reminder of a Romanian Sunday lunch. Still looking for more receipts, and Pinterest is proving to be very helpful.
As I want to keep track of how my body reaches it’s ideal weight, I will track my journey. To establish a baseline, I have measured myself. I will do try and do this weekly, to keep a tab on myself and see the improvements.

Ho'oponopono (Hawai'ian reconciliation and forgiveness)
So what exactly is Ho’oponopono and how does it work?
When Joe Vitale met with Dr. Hew Len and asked him how exactly did he manage to heal these violent patients without actually seeing each of them in person, his answer was:
“I didn’t heal them. I healed part of myself that created them”. To me that was the most fundamental revelation to date. That phrase alone explains the most important presumption of Ho’oponopono: You are 100% responsible for everything. Everything and everywhere! And it means not only your personal screwups and your personal successes. If means if someone somewhere did something and you became aware of that – you are 100% responsible for that. Ho’oponopono is not your free ticket to guilt trip. Being 100% responsible is not the same as feeling infinitely guilty for miseries. It’s reminder of your creative powers and gentle welcome to return back to your inner nature. That is to Zero. Joe Vitale wrote a great book on the subject called Zero Limits. When you returning back to your most inner nature – to Zero – everything becomes available to you effortlessly and you are being driven by inspiration from Divinity, not by petty ego wants. Ho’oponopono’s Zero is the same thing that Eckhart Tolle names Unmanifested. Back to practical reality – let assume that Zero is the next great thing after sliced bread. Or even before sliced bread. Whatever. How do we get to that “magical” state? What exactly needed to be done?
This is achieved by constant cleaning process. Cleaning is the actual Ho’oponopono practice. Cleaning what? You clean yourself from subconscious garbage – programs that run your life without your participation.
Apparently Ho’oponopono process is very simple. Actual Ho’oponopono cleaning process consists of repetitions of the following phrases:

Please forgive me
I am sorry
Thank you
