In my own personal canon Aang is not jealous of Zuko and Katara, instead he's just excited to be the ring bearer/flower boy at his parents' wedding.
I did an Aang is Zutara's flower girl! I really do like platonic kataang and Aang going home to Momtara and Dadko when things get tough.
Zuko's scar may be gone but every time Katara heals him, the lichtenberg figures that etched themselves beneath the surface of his skin on that fateful day still glow under her hands.
I have nothing against the friendship between Zuko and Suki in the comics. But let's be honest, it's clearly there to try and replace the Zutara friendship for me...
I may really only write romance but the female friendships between Suki, Katara, Ty Lee, Toph and Mai are some of my favorite things to write. It's really sad to find out that Bryke doesn't see these as avenues worth exploring because they can be hilariously fun and amazingly supportive and so sweet.
After Zuko grew out his hair he never felt comfortable letting the palace staff care for it. With no one else to turn to he wrote to Katara for help. He expected to get a hurried note with some simple but concise directions. After all she was always off in some far flung corner of the world - helping restore balance.
Instead he was answered with a visit by the waterbender herself. She greeted him sheepishly with an armload of carved bone combs, brushes of stiff boarbear hair, oils, ties, beads and pins.
"Gran gran insisted." she explained, red creeping up her neck and into her cheeks "There's more, the staff is bringing it up now"
"More?" Zuko's eyes were wide.
"-and Gran said I'm not allowed to come back until you can do a seven strand fox braid."
His head tilted to the side, "I mean, it can't be that hard."
She grimaced, "It's most complicated bridal style braid my tribe has."
"Oh." Zuko fumbled, "I uh, should probably arrange a room then?"
Katara sighed and nodded, "Yes"
Iroh silently chuckled into his tea. Grabbing a brush he scribbled a note and passed it to the nearest attendant.
"To Wolf Cove." he said simply.
In the small square of parchment was a single line.
"Kanna you sly old fox."
The fact that Aang still gets insecure about Katara and Zuko being called a couple more than 10 years later tells me the EIP went on tour and subsequently got a lot of people to ship Katara of the Southern Water Tribe with Zuko the Fire Lord.
The fact that the spirit world recognizes them as a couple ... well that's a whole other can of worms.
Whenever someone asks who kissed who first, Zuko or Katara? I've realized it's Zuko and it's probably always Zuko.
Why?
We know from AvatarExtras Jet was Katara's first kiss and if we are to believe Bryke and KA's then A@ng kissed Katara in the cave of two lovers.
Ok and?
Well I wonder if sitting below decks on that stolen fire nation ship if Katara ever felt cursed. Cursed to hold in her arms, the lifeless body of every boy she ever kissed.
Sokka buys Suki flavored lip gloss because he likes the taste when he kisses her.
Zuko catches on and does the same but gets Katara flavored lip balm because she prefers a matte look.
Aang knows better and just wears lip balm and gloss in Toph's favorite flavors.
Ty Lee got herself pineapple lip gloss and Mai coconut lip balm and yells 'Pina colada kisses!' before pouncing on Mai.

Appa and Momo knew Aang had fallen in love with Toph long before Aang could even fathom the idea.
The furry pair could always be found lingering around the earthbender whenever they could, and sure as the sun would rise, Aang would always follow.
I never really got behind Kataang because as much as Aang was the light in Katara's lamp that led her through the dark, he never came close to fire that burned in her heart.
I think the only ones who matched Katara in that way were Suki and Zuko.

On more than one occasion Katara and Zuko have been late to council meetings.
Why?
Because they accidentally fell asleep while catching a quick cuddle in between appointments.

Jet, Katara and Zuko met in college during a gen ed ethics class. Katara organized the study group, Zuko offered his oversized apartment for study sessions and Jet provided the liquid courage that got the three of them in bed together one night.
They passed their exams with flying colors but Katara and Jet haven’t slept in their own dorms in weeks.

Sokka often walks into a room ranting about a problem he has, Mai listens in silence picking at her knives as he keeps talking. This goes on for few rounds of Sokka pacing and talking to himself until he manages to answer his own question at which point he blurts out 'Honey you're a genius!' and lays a kiss on Mai before running out the door to his workshop.
Mai waits for the inevitable crash as he once again misses that one uneven step he never remembers to fix and smiles to herself as she gets up to grab some bandages.
Sokka asked out Mai by making her a perfectly balanced stiletto. On their first anniversary he completed the set by making her four more.
Mai's betrothal necklace can be used as weapon in a pinch.
When Mai found out about Sokka's space sword she put her family's connections to work and arranged for him to forge another on Pianodo's estate.
