(Variation of Chili Con Carne on crinkle fries)

This is something I kinda pulled together with what I had on hand, so I can give you the ingredients and rough steps, but ratios and exact times will be on you and your pallet. Ingredients used to make the chili were:
Ground beef (85/15. You need some fat for the spices)
White onion diced fine
Garlic
4oz can of diced green chilis
2 8oz cans of pinto beans (black beans would work amazing here as well but it will change texture and color)
2 roma tomatoes rough chopped
Spices used:
Salt
Dark Chili powder
paprika
Cumin
garlic powder
onion powder
cayanne pepper (optional)

Season the meat by mixing your spices into it, then fry it off in batches. You may need to put a splash of oil down to keep the first batch from sticking, but there should be enough fat in the meat that it's not necessary past that point. To get the larger chunks you see in the pictures, take some of the ground meat in your hand and roll it into a tube shape, before pinching off pieces in the size you want. You also aren't looking necessarily to cook these all the way through as you'll be cooking it later in the sauce.
When you have all your meat fried, you should be left with a decent amount of oil in the pan. Pour some of this off, but reserve it in case you need more later. A lot of the spices we used to season the meat get activated in fat. The fat in the pan is going to be very flavorful.
Instead you'll use it to saute your onion, salting a touch after you add it to the pan, until it's translucent. Add in garlic, deglaze the pan with lime juice, then add in your tomatoes, green chilis and pinto beans. Cook until the tomatoes have started softening. Taste and adjust seasoning
From here, if you want a smoother consistency and a thicker end product; mash some of the beans with the back of a spoon. That will tighten up the sauce, but you'll lose some of the mouthfeel the beans offer.
Otherwise, return the meat the pot to finish cooking through and serve over a carb of your choice. Fritos and french fries work well, or this can be used as filling for some amazing burritos.
