Not all spices are equal!
Many people believe that the word 'Spice' automatically means it's hot. However this is not the case. All spices and herbs are flavorsome with their own unique taste and texture, but only some are classed as hot! Most people would recognize chilli, cayenne, hot paprika to name a few as being hot and depending on the type of chili, some are extremely 'blow your head off' hot. But many spices are mild in taste and just enhance your selected meat, poultry, fish or vegetarian dish with flavor and texture. Basil, oregano, parsley, mint, coriander, thyme and sage are gorgeous fresh from the garden and are of the mild variety. These are more commonly called herbs, but can also add a hugh amount of flavor when dried and added to your favorite dish. Whether you like it Hot or Not, spices are the perfect partner for your favorite dish!

History of Spices
Spices today are a common household commodity, but that was'nt always the case. Modern cultivation methods and ease of transportation have resulted in plentiful supplies that can be shipped worlwide.
Spice values were once on a par with precious metals, resulting in wars being fought and fortunes being won and lost - all in the name of spice!
There are hieroglyphics at the Great Pyramid that show the workers ate garlic for strength - The Queen of Sheba included spices among her gifts to the King of Solomon. During ancient times spices were mainly used as preservatives, perfumes and medicines.
For centuries the Spice Trade was the domain of the Arabs, who travelled in their camel caravans along a trade route which later became known as the Silk Road. This route linked China and Rome and numerous kingdoms inbetween.
Romans mainly used spices in cooking and after their rise to prominence, they sought a share of the lucrative spice trade. They embarked on long voyages between Egypt and India to source supplies. When they returned across the Indian Ocean, they bought with them pepper, cinnamon, nutmeg, cloves and ginger. Due to the shortage of supply and the length of time it took to get the spices, they remained a luxury. Peppercorns, along with gold, gems and silk were ransom asked for by rampaging Goths to spare the population of Rome from slaughter after they invaded in 410AD.
