Broccoli should be at the top of everybody’s list for a nutritious diet. Did you know, that this plant has been associated with lower risk of cancer, specifically Colon and lung cancer. This all due to a powerful compound called Sulforaphane. The highest levels of sulforaphane are found in raw vegetables. Unfortunately to some, Broccoli is one of the least favorite vegetables in part to its bitter taste. In addition, most boil their broccoli, which could lead to less sulforaphane as it degrades with cooking.

What’s up guys...welcome back!! Today’s a big day of the week. We harvest the majority of our microgreen trays, which can be a big task when you do it by hand. It typically takes us a few hours at best. . Things you are gonna need for harvesting Micros: 1) a sharp knife 2) your hand 3) good tunes 4) time - (which I can’t seem to get enough of. My leaves are up here! This beauty is a stunning microgreen that we grow on the farm that doesn’t get enough attention. I read an awesome article about the benifita of this beauty from @urban.cultivator . Here are some snippets from that article: “Amaranth has been consumed as far back as pre Colombian Aztecs, who referred to it as huauhtil. In fact, It has been said to consist of 80% of their diet at some point”. Probably because, “compared to rice, amaranth has almost 30% more protein”. In addition to protein, they are rich in: lysine, thiamine, calcium, niacin, iron, manganese, zinc, potassium, copper, folate and vitamin A & C There you have it guys. Super food with super looks😍. You owe it to yourself to make this beauty a part of your life ASAP!
