Nero d'Avola & stir fry local asparagus A match completely unexpected as one will know how notoriously difficult it is to paired wine with asparagus and red wine even more so I was tasting the 2019 Bosman Family Vineyards Wellington Nero d'Avola, South Africa's pioneer of the Sicilian variety and to date the sole producer and it happened we were preparing local asparagus for dinner, simply stir fry 'al dente' with evoo, crushed garlic, light soya sauce, flat leaf parsley and spring onions, somehow at the back of my mind knowing its the least of choice pairing red wine with asparagus, yet unconsciously did it while dishing out and had some wine left on the counter after making my notes and boom, they worked, had a second sip and another bite of asparagus, it was yum The delicate yet crunchy cherry structure of the Nero d'Avola was in harmony with the stemmy crunch of asparagus and slightly burned garlic and parsley lifted the wine fruit aromatic, give it a try you will be pleasantly surprised as I did #MiguelChan #Sommelier #Africa #Asparagus #NeroDavola (at Johannesburg) https://www.instagram.com/p/Cp6HsbTquRl/?igshid=NGJjMDIxMWI=
