Stuffed Bell Peppers
Mexican cauliflower rice: 1 head cauliflower 1/4 white onion, chopped 2 cloves garlic, minced 2 tablespoon tomato paste Dash of Tabasco or hot sauce 2 tspn cumin 1 tspn chili powder 2 tablespoon olive oil Ground pepper to taste
Chop cauliflower in pieces and feed through the grate attachment on a food processor. If you donât have a food processor, chop in fine pieces or use a hand held grater. SautĂ© onion and garlic in olive oil. Add cauliflower and tomato paste. You may need to add a little water or chicken/vegetable stock. I did. Once tomato paste is absorbed add spices and Tabasco. I threw in a little salsa this time too. Cauliflower rice will take on whatever flavor you give it! After sautĂ©ing for about 12 minutes cover and let summer for about 5 minutes.
Ground turkey taco meat (I canât take credit here, my super awesome boyfriend made this part of the meal) 1Â lb ground turkey 1/3 yellow onion 4 garlic cloves 2 tspn cumin 1 tspn cyan 1 tspn chili powder 2 tablespoons olive oil Salt and pepper to taste
Sauté garlic and onion in olive oil. Add ground turkey along with all remaining spices. Cook ground turkey through.
Cut the tops off 4 bell peppers and remove seeds. Stuff peppers with cauliflower rice and ground turkey. We layered the rice then meat, you could mix them together as well, depending on your preference. Place the peppers in a glass dish with about a 1/4 inch of water in the bottom. We used a pie plate. A 9x9 would work great too. We added a little cheese to the top (not totally paleo but so yummy). Bake at 400 for about 35 minutes. Top with salsa and avocado if desired.
