Ingredients: 1 lb dried red beans. 1 lb andouille sausage, sliced. 1 onion, diced. 1 bell pepper, diced. 3 celery stalks, diced. 3 cloves garlic, minced. 4 cups chicken broth. 1 teaspoon dried thyme. 1 teaspoon smoked paprika. 1 teaspoon cayenne pepper. 1 bay leaf. Salt and pepper to taste. 4 cups cooked rice. Green onions, sliced for garnish.
Instructions: Rinse the red beans and pick out any debris. In the Instant Pot, combine red beans, andouille sausage, onion, bell pepper, celery, garlic, chicken broth, thyme, smoked paprika, cayenne pepper, bay leaf, salt, and pepper. Close and seal the Instant Pot. Cook on high pressure for 25 minutes, followed by a natural release for 15 minutes. Open the Instant Pot and discard the bay leaf.
