@3.bunnies' entry for the #BESTOFVEGANSALADJAR contest 💚 To enter, simply post your most creative vegan salad jar and tag @bestofvegan & #bestofvegansaladjar in the caption;) ______________________________________________ Summer Harvest Salad Jars with Green Basil Dressing Ingredients For the layers Whole chickpeas Halved baby heirloom tomatoes Halved cucumber slices Chopped red bell pepper Sliced celery Small broccoli florets Sliced green onion Rainbow carrot ribbons For the dressing Handful of basil 1 clove of garlic 1/4 cup of cashew 1 tsp of lemon juice 1/2 tsp of chopped green onion 1/8 tsp of pink Himalayan salt 1/8 tsp of black pepper 2 tbs of filtered water 1/2 tsp of apple cider vinegar Directions 1. Lay layers in order and cap off jar. 2. For dressing combine all ingredients into a food processor or grind down in a pestle and mortar. 3.
