Meatless Monday with Paneer!
Red Lentil Soup
1 large onion,chopped
1 tablespoon olive oil
4 garlic cloves,finely chopped
1 teaspoon ground cumin
1 bay leaf
1 cup red lentil,rinsed
31/2 cups chicken broth
2 cups water
chopped parsley
Cook onion in olive oil with 1/2 tsp.salt until softened.Add garlic,cumin,bay leaf and cook for 1 min.Add lentils,broth,water...simmer for 30-45 min.Remove bay leaf and season with salt,pepper and parsley.Top with little sriracha sauce.

Usually I make my meals in the oven but when cravings hit, I run to my frying pan! Love savoury crepes and these ones are filled with leeks, cream cheese and mushrooms. The little bundles are tide with a long string of leeks and sprinkle with Gruyere cheese.
