A Chance Happening:
My eldest daughter came home for the weekend. I, of course, as the mom who missed her daughter dearly, wanted to do something special. I rounded up everyone in the car and we headed to New Paltz to view the Fall foliage and get lunch.
My intentions was for us to visit the local Tea Room (You know how we love Tea) but, it was a Monday and the Tea room was unfortunately closed. So, we had lunch at one of the local restaurants. Next it was off to do some sightseeing.
We took the scenic route and passed a couple of farms along the way and purchased pumpkins and apples. I carved some of the pumpkins with my grandkids and decorated the house sparingly with the rest. I rescued a few of the apples for baking and cooking purposes before my family devoured them. I made apple pie, apple dumplings and apple turnovers. I also made Stewed Apple; a savory made in big batches and refrigerated for use on chicken, pork or meat. I, myself, prefer to serve them with pork chops. It's amazing and quite the treat. Check out the recipe below.
Stewed Apple:
Ingredients
4 or 5 large apples peeled, cored and chopped into small cubes
1 large onion chopped
3 cloves of garlic chopped
2 bay leaves
2 tbs vegetable oil
1 tbs sugar
salt
pepper
Directions:
In a large skillet add the oil, garlic, onion and bay leaves and let cook until the onions are soft, Next, add apples and sugar. Let cook for about 10 minutes and then stir. Add salt and pepper to taste and continue cooking. stir every so often for about ten minutes. Let cool and refrigerate in an airtight container. Use as a wonderful addition to your favorite meats.

I got the opportunity to cater a High Tea for Age Friendly Ambassadors and Council Member Clergy of Councilman Robert Conergy at the historic Akwaaba Mansion in Brooklyn. It was a pleasure to see everyone so beautifully dressed under the July sun for tea. Check our recap photos.

Service Includes: A selection of two varieties of tea sandwiches and two varieties of scones; or two varieties of scones and three petti-four desserts, three teas, jams/preserves, Devonshire cream, tableware, utensils and an instruction class on the proper method for brewing and serving different varieties of tea.
Alot of people have asked about the feature image on my site. “What cake is that? It look scrumcious!” I get. Although I would give out to secret to one of my favorite treats. Catered a vegan 50th birthday dinner in Brooklyn. I brought my supplies and made setup in the kitchen. I did a vegan three course meal for a party of 12 pleased birthday goers. There isn't a challenge that I don't jump at accepting. And, this was certainly a pleasure to do. You'll be seeing a host of more images like this as we prepare to relaunch in the city.
Presentation in an integral part of what I do. To make the best of any experience when catering an event, I strive to provide excellence for my clients. A lot of that entails taking your time in preparation, using quality ingredients, and paying close attention to detail. This event I catered for the National Association of Negro Business and Professional Women Incorporated in Bedford Stuyvesant served as an ideal of example of how these three components can create an experience met with style, class and most importantly grace.
