I made elderberry syrup today—it’s apparently great to boost the immune system and prevent colds? I’ll be testing it this winter, I can use it to sweeten my tea. I licked the spoon before bottling it and it tasted red and sweet. Like berry-flavoured honey. I also set some berries aside for the hens so they can develop their palate!

Elderberry it’s a great immune support! I also like to make cordials with elderberries, you just have to steep the berries in some tasty alcohol like brandy or bourbon and when they are ready add honey. It’s delicious and I can use my fancy litte liqueur glasses.
