Cous Cous Bowl
So i’ve been inspired by healthy eating lately but keeping it tasteful. Which means more raw foods and vegetables ( cooking destroys the vital and essential nutrients that we need to stay healthy, eating our food raw does the opposite.). All in the name of changing my lifestyle. This cous cous bowl, much like a rice bowl has lots of great benefits for you. High in vitamins and protein.
I’m also considering becoming a vegetarian. Yes, a veggie eating person *cringe*. lol i’ll pause as you laugh, actually its for me too laugh really.
Anyway enjoy, it was interesting.
ingredients:
1 cup of cous cous
1/2 onion
1 tbsp of butter
salt and pepper to taste
1 cup of spinach
1 tbsp of balsamic vinegar
1/2 cup chickpeas
1 tbsp curry powder
1 tsp chopped garlic
1/4 cup of cherry tomatoes
1/2 cup of spinach
2 tbsp of feta
Method for cous cous: In a bowl place the cous cous, butter, salt, pepper and 1 cup of boiling water. Cover with foil and leave to the side. Chop half an onion into fine pieces and fry over low heat in little oil until it caramelizes. After 15 mins the cous cous should be done, use a fork to make the cous cous fluffly and add the caramelized onion.
Method for Chickpeas: In a pan, fry the garlic on high heat until fragrant, add curry powder and stir. Then add the chickpeas. Add about 1/4 cup of water, turn of the heat (so you don’t over cook the chickpeas) and mix everything together well.
Method for spinach: Simply toss the spinach in the balsamic vinegar.
