This tomato basil soup has a lot of great flavors and is a great way to warm your hearts on Valentine's Day. When you mix ripe tomatoes, fragrant basil, and a hint of cream, you get a luxurious and comforting taste.
Ingredients: 4 cups ripe tomatoes, diced. 1/4 cup olive oil. 1/2 cup fresh basil, chopped. 1 onion, finely chopped. 3 cloves garlic, minced. 4 cups vegetable broth. 1/2 cup heavy cream. Salt and pepper to taste. Croutons and fresh basil leaves for garnish.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Add the chopped onions and garlic and cook until the onions are soft and fragrant. For 8 to 10 minutes, until the tomatoes get soft, add the diced tomatoes. Add the vegetable broth and slowly bring the whole thing to a simmer. Add the fresh basil and season with salt and pepper. Allow the flavors to blend by letting the soup simmer for 15 to 20 minutes. Blend the soup until it's smooth with an immersion blender. Add the heavy cream and stir it in. Let it cook for five more minutes. If necessary, change the seasoning. Add croutons and fresh basil leaves on top and serve hot. For an extra touch of romance, serve it with crusty bread.
