✨️Golden Hour✨️
✨️ Inspired by Lana Lang ✨️
Ingredients:
- 1½ cups (190g) all-purpose flour
- 1½ teaspoons baking powder
- ½ teaspoon salt
- ¾ cup (150g) sugar
- ½ cup (115g) butter, softened
- 2 large eggs
- ⅓ cup honey
- ½ cup Greek yogurt or sour cream
- 2 tablespoons lemon juice
- Zest of 2 lemons
- 1 teaspoon vanilla extract
Honey Lemon Glaze:
- ½ cup powdered sugar
- 1–2 tablespoons lemon juice
- 1 tablespoon honey
Instructions:
1. Preheat oven to 175°C (350°F). Grease and line a standard loaf pan.
2. In a bowl, mix flour, baking powder, and salt.
3. Beat butter and sugar together until light and creamy.
4. Add eggs one at a time, mixing after each addition.
5. Add honey, Greek yogurt (or sour cream), lemon juice, lemon zest, and vanilla. Mix until combined.
6. Slowly add the dry ingredients and mix until just incorporated. Do not overmix.
7. Pour batter into the loaf pan.
8. Bake for 45–55 minutes, until golden and a toothpick inserted in the center comes out clean.
9. Let cool before adding glaze.
10. Mix powdered sugar, lemon juice, and honey until smooth. Drizzle over the cooled cake.

- 1½ teaspoons cinnamon
- ½ cup (115g) butter, softened
- ¾ cup (150g) brown sugar

- ¾ cup (180g) sour cream or Greek yogurt
- 2 medium apples, peeled and diced (about 2 cups)
Cinnamon Crumble Topping:
- ½ cup (65g) all-purpose flour
- ⅓ cup (70g) brown sugar
- 1 teaspoon cinnamon
- 4 tablespoons (55g) cold butter, cubed
Instructions:
1. Preheat oven to 175°C (350°F). Grease an 8-inch round cake pan or 9-inch square baking pan.
2. Make the crumble topping: combine flour, brown sugar, and cinnamon. Add cold butter and rub together until the mixture forms small crumbs. Set aside.
3. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
4. Beat butter and brown sugar until creamy.
5. Add eggs one at a time, mixing well after each addition. Add vanilla extract.
6. Mix in sour cream or Greek yogurt.

You can't really see the glaze but I poked holes in it so the cake will soak it up.

I've already got the stuff to make the crumble. Probably will do that in a few days! And I've never really deep fried anything before, or worked with yeast (that isn't in brewing) but I'm fixing to make those too!

Don't simplify anything!! Baking is about pushing yourself and learning new things. I've always wanted to learn how to deep fry and this gives me the perfect opportunity. And for this loaf recipe I'm already thinking of ways to make it more mine. Like adding lavender or improving my techniques like shifting the powdered sugar and/or flour. That's a mark of GREAT recipes to me.
Your recipes are already so approachable and I think that's what scared me at first. Please don't change anything. They are uniquely yours and that's what makes them awesome. ☺️🩷
It's Sunday! (Well yesterday was) So I made the Kansas Sunday! And it's SO GOOD! I used Cosmic Crisp apples which keep their bite even after being baked. Next time I might use apple pie spice instead of cinnamon and a little more apple (I only used one which was 2 cups). But lordy I could make this once a week EASILY.
