I hot smoked salmon using cherry wood this weekend. Brine the filets overnight and pat dry. Set under a low fan for 2 to 4 hours to develop the pellicle. Baste with something sweet on the hour. I like honey but maple is also great. Smoke at ~ 140F (60C) for up to 6 hours to an internal temp of 130.
