Blueberry Cream Cheese Bread
OH MY GOSH. I tried this in August and I've already made it again, it's that fantastic. And something that is wonderful? I got the recipe from this blog with these delicious looking pictures, and even though my camera and photo skills are.... not comparable to this professional blogger's... The bread looks JUST as good in person.

The ingredients are as follows:
FOR THE BREAD:
½ cups Butter
½ cups Sugar
¼ teaspoons Salt
1 teaspoon Vanilla Extract
2 whole Egg Yolks
1-½ cup All-pupose Flour
1 teaspoon Baking Powder
⅓ cups Milk
1-½ cup Blueberries (up To 2 Cups, Which I Prefer)
1 Tablespoon All-purpose Flour
2 whole Egg Whites
¼ cups White Sugar
FOR THE FILLING:
8 ounces, weight Cream Cheese
½ cups Sugar
1 Tablespoon Flour
1 whole Egg
1 Tablespoon Orange Zest
FOR THE GLAZE:
2 Tablespoons Sugar
½ teaspoons Vanilla
1 teaspoon Water
Instructions:
For the Bread, cream the butter and sugar (1/2 cup) until fluffy; then add the salt and vanilla, and the egg yolks (save the whites for later).
Then combine the flour and baking powder and add this mixture alternating with the milk (start and end with flour). Add the berries (the original recipe says to coat them in flour first. I don't know why. But I didn't do it and it was fine.)
In a separate bowl, beat the egg whites "until soft peaks form" (whatever that means... I did it until I didn't want to anymore. Whatever), and then slowly add in 1/4 cup of sugar. Once the mixture is smooth, add it to the first batter.
For the filling: combine cream cheese, sugar, 1T flour, egg, orange zest, and beat until smooth. The original recipe tells you to mix this first, but the blogger says that s/he leaves the cream cheese in the fridge until the batter is made. I did the same.
Anyway, once both are made, pour half the batter into a greased bread pan. Add the filling on top, and then the rest of the batter. Then top it with the glaze (2T sugar, 1t water, 1/2 t vanilla-- just mix it together).
Bake for 55-60 minutes @ 350 degrees.
I love it because, with the blueberries and cream cheese, the bread stays moist for days. I LOVE having it for breakfast and would even serve it as a dessert at a brunch or something. So yummy.
