A comforting and flavorful white chicken chili cooked slowly in a crockpot, perfect for a cozy meal.
Ingredients: 1 lb chicken breasts, diced. 2 cans white beans, drained and rinsed. 1 onion, chopped. 2 cloves garlic, minced. 1 can diced green chilies. 4 cups chicken broth. 1 tsp cumin. 1/2 tsp oregano. 1/4 tsp cayenne pepper. Salt and pepper to taste. 1 cup frozen corn kernels. 1/4 cup chopped fresh cilantro. Juice of 1 lime. 1/2 cup sour cream. 1/2 cup shredded Monterey Jack cheese.
Instructions: In a slow cooker, combine diced chicken, white beans, chopped onion, minced garlic, diced green chilies, chicken broth, cumin, oregano, cayenne pepper, salt, and pepper. Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through and flavors are blended. About 30 minutes before serving, stir in frozen corn kernels, chopped cilantro, and lime juice. Serve hot, garnished with a dollop of sour cream and shredded Monterey Jack cheese.
