Ingredients: 2 cups cauliflower rice. 2 tablespoons avocado oil. 1/2 onion, diced. 2 cloves garlic, minced. 1 bell pepper, diced. 1/2 cup diced tomatoes. 1/4 cup chopped cilantro. 1 teaspoon ground cumin. 1 teaspoon chili powder. Salt and pepper to taste. 1 avocado, diced optional, for garnish. Lime wedges optional, for serving.
Instructions: Heat avocado oil in a large skillet over medium heat. Add diced onion and garlic, saut until fragrant. Stir in diced bell pepper and cook until softened. Add cauliflower rice to the skillet, stirring occasionally until tender. Mix in diced tomatoes, chopped cilantro, ground cumin, chili powder, salt, and pepper. Cook for an additional 2-3 minutes, allowing flavors to meld. Remove from heat and garnish with diced avocado if desired. Serve hot with lime wedges on the side.
